Loaded with veggies and the grand star ingredient being potatoes this recipe calls for no boundaries. Its a favorite easy to make and share recipe among all ages. Nothing basic about this recipe though.

Now lets begin making this recipe. From start to finish this is ready in mere 15:8 minutes tops, had to go back and check the video recording.
You will need homemade or store bought bread could be eggless dinner rolls or even a sliced bread will work. Focaccia may work as a backup. Really any spongy bread works well as long as it soaks up the goodness of the *BHAAJI*

Lets begin with boiling 1/4 lbs or 1/4 kg skinned potatoes for about 10 mins with lid on, check and boil some more till they fall apart. Drain out water or fish them out in a separate bowl.
We need 1-2 cups chopped bell peppers
1 chopped tomato
1 cup veggie medley (corn,peas carrots)
1 tbs oil
1 tsp whole cumin seeds
1 tbs ground coriander
1 tsp garam masala
1 tsp turmeric powder
1 medium sz chopped onion
and
Secret ingredient :
Mint Pani Puri chutney
1/4 tsp cumin seed
1-2 green medium spice chili
3/4 cup mint leaves
1 cup cilantro
4-5 big garlic cloves or 1tbs worth garlic paste
1 tsp black salt
1 tsp lime juice
Make a paste of all these and set aside.
Heat oil in a pot. Add whole cumin followed by chopped onions, fry till light golden.
Add dry spices, turmeric, coriander powder, red cayenne pepper powder, garam masala, and mix well. Now add the pani puri chutney and cook till the mixture renders oil , followed by chopped tomatoes.
After its well incorporated and the mixture separates from oil add chopped bell peppers and veggies medley ( corn, carrots and green peas)
Cook till veggies are very soft. Mash them with a potato masher, add fresh mint leaves at this point and add the boiled and mashed potatoes .
Mix all well and cook for about another 15-20 mins with some added water.
Fry bread in minimum butter (optional) or you can even toast them.
Serve with bhaaji garnished with red sliced onion, sliced lime, and fresh cilantro.
