OIL FREE Yummy Seafood Medley Stew - easy and simply mouth watering recipe


 We are seafood fanatics and need an excuse to make it ;) This is a very simple and tasty recipe that you can make in your kitchen with simple and easily available ingredients.

Ingredients:

  1. Fresh Seafood-  tail on deveined shrimps 100gms. , or any meaty fish, here I used  1 inch cubed cod 100 gms.
  2. 1 can coconut milk
  3. 1/2 tsp freshly diced ginger
  4. 1/2 tsp  freshly diced garlic
  5. 1/2 cup chopped cilantro
  6. 1/2 tsp diced turmeric root
  7. 1/2 tsp turmeric powder
  8. 1/2 tsp kashmiri chili powder
  9. 2-3 pieces Kokum - tart dried fruit used in seafood recipes in India
  10. optional 1tsp lime or lemon juice
  11. 1 cup Steamed plain basmati rice
  12. 1 green chili diced or 1/2 tsp cayenne for needed heat(optional)
  13. 1/2 lengthwise cut raw onion (optional)
  14. optional 1/2 whole cumin seeds
Utensils:  medium size Iron wok and wooden spatula.


Let’s start by cleaning the seafood in a pinch of salt and pinch of turmeric powdered water.

Set aside the seafood and start with your prep work. Take your wok and heat it on medium high. Add your seafood to it then add your chopped ingredients along with cumin seeds and onions. Avoid stirring or flipping the seafood much to avoid breaking the pieces of fish. 
Now add your coconut milk and rinse the can with a 2-3 table spoons of water.
Bring to boil and let it simmer for 12-15 mins. Please do not over cook your seafood as it tends to get more tough. 
You could decide on the consistency of the stew, dilute the stew by adding or reducing plain water.
Serve it hot with steamy basmati rice and garnish with a drop of lime juice and chopped cilantro.
