Homemade Shrimps Burrito

Homemade Burrito spread

 We love Burritos in my family and make it whenever possible. This a such an easy dish to put together once all the stuff are ready to be assembled. Kids love to make their own burritos and are so happy to eat it too. They have never frowned ever when they are on this diet. It’s so light, fresh and easy to enjoy on your lunch or dinner table. This a whole meal on its own and each person could have as much or as little from the assembly line. Even your picky kids won’t frown for this one!

We need to make our assembly line of different varieties of veggies and proteins that will go in your burrito.

Utensils: Iron Wok

Veggies : Fajitas, Guacamole, Salad

  1. Fajitas- Colorful Bell peppers cut length wise, Onions cut length wise. Add 1tsp Spanish EVOO to the iron wok on a high smokey level and roast the veggies in it till they get medium soft. 
  2. For Guacamole-you will need juice of 1lemon or 1 lime, 2-3 Fresh ripe Avocados, 1 seeded fresh tomato, 4-5 diced pickled jalapeƱo , 1/4 finely chopped red onion, 1 tbs Spanish Extra Virgin Olive Oil, 3-4 finely diced fresh garlic, cilantro chopped 1/2 cup optional, salt to taste. Mash all the ingredients with a potato hand masher till it reaches a smooth spreadable consistency.
  3. Salad you’ll need finely shredded cabbage or lettuce, red cabbage, and finely shredded carrots length wise.

Proteins: Shrimps / Chicken

Add deveined shrimps to a high temp iron wok with 1 tbs Spanish EVOO. Add turmeric, Kashmiri chili powder, cumin powder, salt to taste and fry till aromatic. Squeeze fresh lime juice on it with some cilantro for garnish.

Tortillas: Whole wheat / All purpose flour/ store bought sprouted beans or nut based tortillas , roast them slightly over the flames of your cook top with safety tongs.

Cheese: Mexican Shredded cheese mix

Steamed White Rice nice and seperated grains.

Get all the serving bowls and plates laid out. Grab a tortilla, spread moderate amount of Guac on one side of the tortilla. Add small amount of rice, top it with Fajitas, a small dollop of guac shredded cabbage mix and top it off with 3-4 fried shrimps.
